October has been such a busy month for me, but it is also my favorite because it is my birthday month! It is also the beginning of sweater/boot weather here in North Carolina so that brings me joy as well.
One of my favorite snack/lunches since I was a little girl has always been and will always be peanut butter and jelly sandwiches. I know several people with peanut allergies and it makes my heart sad to know that they can never fully enjoy this beautiful invention. (I know that they have plenty of alternatives so don’t think I’m being rude, I just know how much I love peanut butter). So in celebration of the best month, I made these super easy and super delicious Peanut Butter and Jelly Blondies. The recipe is very similar to regular brownies.
One day as I was scrolling through my fellow food bloggers, I came across a series of posts from AnUnrefinedVegan.com that were making vegan versions of this list: 29 Ways to Honor The Glory of Peanut Butter and Jelly
Number 12 caught my attention because it looked simple and it turns out that I had all of the ingredients already. Check out the delicious looking vegan version here: Sugar-free Peanut Butter and Jelly Blondies
I basically followed the directions from here.
First, I melted the butter and peanut butter in the microwave for a couple seconds. Then added the brown sugar, vanilla, and egg. Preheat oven 350.
Next, add the flour and salt and mix everything together until smooth.
I put aluminum in baking dish and sprayed with cooking spray. Then poured peanut butter mixture and spread it across the pan.
Scooped dollops of jelly and peanut butter on top and swirled it around using a butter knife. Bake for 20-25 minutes and make sure you don’t over bake. After you take them out, don’t let them cool for too long because they are the best when they are warm! Then comes the best part…
Mmm I’m in love..
I also decided to try peanut butter and jelly pancakes.
