Sweet Potato Snacks

Today’s post will be a short one. Over the holidays, I made this and I almost forgot about it. When I was little, my mom made us potato latkes around Hanukkah..and we’re not even Jewish. I think she just liked the idea of potato pancakes. Anywho, I was inspired to try my sweet potato version because I already had all of the main ingredients. Here is the recipe that I modeled mine after: Baked Sweet Potato Latkes<< They look a lot better than mine so if you want the real deal, you should probably use that recipe lol

Ingredients I used: sweet potatoes, green onion, minced garlic, Italian bread crumbs, 2 eggs, seasonings (salt, pepper, etc)

I peeled and cut the sweet potatoes into fourths and used my new food processor. Did the same for the green onions:

Mix all of it together, with the bread crumbs, garlic, eggs, and seasonings. Preheat oven 425 degrees and grease foil sheet. Bake for 15 min on each side.

I ate them with ketchup and they were pretty tasty! Finally, one of my experiments went right lol. I ate them with some fruit for a light lunch.
